Waldorf Salad

So my friends for Christmas had made me a cookbook and filled it with adorable little recipes.

One of these recipes was Waldorf Salad :). This salad is absolutely delicious and I am no salad connoisseur but it's one of my favorites
Waldorf Salad:
Ingredients
3 Large Apples
1 tbsp. lemon juice
3/4 cup diced celery.
1/3 cup chopped walnuts
1/2 cup mayonnaise
1/8 tsp. cinnamon
3 tbsp. heavy cream
1 tbsp. sugar
1/8 tsp. vanilla extract
Crip greens, if desired.
Directions:
Peel 2 apples, core and dice.
(We had a slight problem with actually peeling the apple because the knife was serrated)
Core and dice the other apple, leaving the peel on. Mix with lemon juice. Add celery, walnuts, mayonnaise and Cinnamon. Stir lightly to mix. Chill in covered container until ready to serve.
Beat cream with sugar and vanilla in small bowl until stiff and gently stir into apple mixture. If desired, serve on crisp greens.



It's not the prettiest salad ever but it's very delicious. Nikki took some great pictures and you can even see the specks of cinnamon that made the salad really attractive :D.

Sushi Cupcakes















Recipe from Hey There, Cupcake! with a few changes:

-Make mini cupcakes with white/vanilla cake mix.
-Cut away at the cupcakes to create a sushi-like shape.
-Melt chocolate and roll sides of cupcakes in chocolate to look like seaweed.
-Make "rice" by mixing 1:1 of sour cream and shredded coconut (and add a little vanilla extract) and frost the tops of the cupcakes with mixture.
-Add "fish". We recommend using blackberries (fish eggs), bright colored apple pieces and fruit strips.
-Serve in sushi tray with chopsticks!

Notes:
-When making the glaze, add the milk to the powdered sugar, not the other way around. The recipe says this for good reason, as we learned!
-We used store-bought pie crust and it worked just fine.
-Sprinkles are absolutely necessary.
